The flavour is enhanced with the addition of jasmine blossoms which give the tea a visual appeal few other teas are capable of copying.

There are many different grades of jasmine tea. This particular grade is the first grade below the jasmines. It has all the flavor, aroma and good green tea qualities but not the exorbitant price. In China they declare this jasmine tea as 'Jasmine #1'.

The production of jasmine tea is quite interesting. It is important to begin with high quality green tea - tea that has been produced between the middle of March and the middle of May. Equally important for jasmine tea are fine jasmine blossoms - flowers that bloom between the 1st of May and the end of May (these have the most intense aroma). Traditionally layers of jasmine blossoms were placed between fine green tea. In time the scent of the jasmine permeated the tea. Today, hot air is passed through the jasmine blossoms and then filtered through the tea so that the blossoms can be used more than once. The exhausted blossoms are then used to decorate the tea. Produced in both China and Taiwan, jasmine tea yields a cup with all the concentrated heady bouquet of a garden in bloom.

Ideal Brewing Temperature: 85ºC/185ºF.

HOT BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. After a botanist made the discovery, he decided to name the flower Neroli bigarade after Princess Nerola, the daughter of the ruler of the town where it was found. The princess was delighted and took to wearing a perfume created from the delicate white petals of the blossom. Some legends claim that the Princess and the botanist fell in love and were married, but as town records were poor this remains unsubstantiated. Sounds romantic though! Over the ensuing centuries, the blossoms came to symbolize the Western ideal of love and marriage and their popularity grew, particularly in wedding bouquets. In Victorian England, Orange blossom bouquets were so popular the flowers were imported from Florida strictly for that purpose. It was said at the time that the scent of Orange Blossoms could cause anyone to fall in love.

Well, we aren't matchmakers but if there's one thing we're sure you'll fall in love with it's this tea. The blend was created using a semi-fermented oolong from Taiwan known for a lively full flavor with hints of berry jam and sweet floral undertones. Since food quality orange blossoms are a little harder to come by today than during the Victorian era, after extensive profiling we recreated their flavor using a mix of jasmine and natural flavouring. Rounding out the blend is a Ceylon black tea for some added depth. Like love, the cup is sublime. The problem for Irish tea-drinkers arose when part way through the war, much to the consternation of the British government, Ireland declared itself neutral in the global conflict. The British retaliated for what they saw as an act of subversion by cutting their tea ration down to almost nothing. Undaunted, the enterprising Irish government set up its own tea importing company, Tea Importers (Eire) Ltd., and tea drinkers throughout the Emerald Isle rejoiced!

In honor of the tea drinking spirit of the hardy Irish, we've developed this good strong blend. This blend, like most tea consumed in Ireland these days is made from East African and Ceylon varieties with a special addition - a good strong Assam. The addition of the Assam adds a depth to the tea that is beautifully offset by the addition of cream, another Irish favorite. One such tale tells how a British diplomat on a mission to China saved the life of a Mandarin and as a gift of gratitude was given the recipe for this flavored tea. This diplomat upon his return to Britain presented the tea to the Prime Minister of the day, Earl Grey. Another story says it was the Prime Minister himself who saved the Mandarin. These three high-grown districts produce flavorful teas that have classic Ceylon character which is noted by a floral bouquet, touches of mild astringency, and bright coppery color. We buy during peak season to ensure top quality and freshness. We only use natural flavoring on the tea as we do not want to mask the natural taste of high grown black tea (the overpowering and synthetic character of artificial flavoring is often used to hide lower quality tea).

Ideal Brewing Temperature: 100ºC/212ºF

HOT BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. Situated just below Spain a short hop across the Straight of Gibraltar, Morocco was for hundreds of years an important link between East and West in terms of both commerce and culture. While it's prominence as a trading mecca has diminished somewhat over the last hundred years or so, King Hassan II, Morocco's reigning Monarch still likens his country to a desert palm tree: "rooted in Africa, watered by Islam and rustled by the winds of Europe." We couldn't have said it better if we tried. There is perhaps no Moroccan tradition that illustrates this constitution better than the brewing and serving of good strong Moroccan Mint tea.

It is believed that it was Europeans, specifically the English that introduced Moroccans to tea. The beverage was an instant hit with the Muslim populace who already had a custom of drinking a hot beverage made of locally grown mint leaves. The British tea fit right into their lifestyle. Before long, it was discovered that when the tea was added to the mint beverage, which was heavy and harsh, the cup smoothed out and became much more palatable. And so East met West in a most satisfying way.
We're pleased to offer the next best thing to a trip to a Marrakech tea stall, Moroccan Madness tea. Moroccans say that tea should be bitter as death, sweet as life and as mellow as love. With our blend of Sri Lankan and Indian teas and Washington state mint, (some of the finest mint in the world), we've believe we've captured that in this cup. Assam, far up in the north eastern corner of the country has been the home of headhunters, served as the starting point of the Burma Road during WWII and was the first place tea was grown by the British within their old Empire. Darjeeling, located high in the Himalayas is the site of one of India?s remaining steam trains, survived a major earthquake in 1898, the "Darjeeling disaster" and gained a reputation for growing some of the world?s best black teas, grown on hybrid bushes developed on its steep slopes. The Nilgiri Hills were first discovered by Europeans in 1602, were first fully explored after a pursuit of criminals and is the origin of the world?s most expensive lot of tea, $600 / kg, earned at North America?s first auction, held at Las Vegas in 2006.
Yes, Star of India is some tea. Over the centuries, many have argued where the tart, bitter fruit originated; some say the lemon first came from Malaysia, China, Persia, or Asia Minor. 20th century archaeological evidence however shows that the fruit came originally from the Indus Valley - a lemon shaped earring carbon dated from 2500 BC was found there. By the first century AD the fruit was being cultivated in Palestine and Greece. By the second century AD lemon cultivation had spread to Libya in Northern Africa. Growers there exported lemons by the shipload throughout the Roman Empire - one can even see a lemon depicted in a mosaic in the ancient city of Pompeii. Many centuries later, as tea became the drink of choice in Britain, people discovered that the tart acidic flavor of lemons complemented the astringency of black tea perfectly. Lemon is now one of the most common additives to a cup of tea after milk and sugar. We're sure you'll find our version of this tea refreshing pot after pot. Incidentally, this is one of our favorites poured over a nice tall glass of ice with a sprinkling of sugar. Lemon tea, you can't beat it.

What type of tea do we use, how do we flavor the tea and why do we use natural flavors?
Firstly... we only use high grown teas from the top 3 tea growing regions of Sri Lanka - Nuwara Eliya, Dimbula and Uva. These three high-grown districts produce flavorful teas that have classic 'Ceylon' tea character which is noted by floral bouquet and flavor notes, touches of mild astringency, bright coppery color and, most importantly - perfect for use as the base tea of our flavored teas. (We have tested teas from various other origins around the world as base stock for our flavored teas, but none of these teas made the grade.) Dimbula and the western estates of Nuwara Eliya have a major quality peak during Jan/Feb, whereas Uva and the eastern estates of Nuwara Eliya have their peak in July/Aug. This 'dual peak period' allow us to buy the best for our flavored tea blends several times during the year, ensuring top quality and freshness.
Secondly... we use flavoring oils not crystals to give the tea drinker an olfactory holiday before indulging in a liquid tea treat.
Thirdly... we specify natural flavors. High quality tea tastes good and natural flavors do not mask the natural taste of the high grown Ceylon tea. (The norm for many making flavored tea is to use overpowering artificial flavors, which can be used to hide lower quality tea). Natural flavors do not leave an aftertaste giving the tea a clean and true character. It should be noted that natural flavors tend to be somewhat 'soft ' and the flavors slightly muted, but for many this is a refreshing change and one of the desired attributes of our naturally flavored teas.

Ideal Brewing Temperature: 100ºC/212ºF

HOT BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. And evidently we aren't the first to hold that opinion. In China, archaeologists working during the time of Chairman Mao discovered evidence of people enjoying apricots and peaches together at least 4000 years ago. From those ancient times, both fruits eventually made their way westward in the form of cuttings and seedlings, traveling via Persia to the Mediterranean regions of Italy and Spain. In Italy, both fruits flourished and rose in such popularity that they became noted favorites of various rulers of the Roman Empire. So what makes the fruits go so well together? The key is in their delicate, intensely sweet flavor profiles. The characters of both fruits together blend into a harmonious explosion of citrus-y goodness. And what makes them blend so well with a high grown Ceylon tea? The answer to that question is the natural acidity, and astringent qualities of both. Try a cup for yourself and discover what makes this one of our most special flavored teas. Peach and apricot - 4000 years of history can't be wrong!
